Thaw as you would a frozen turkey.
Rinse inside and out and pat dry with paper towels.
Generously glaze a smoked turkey with ¼ cup prepared mustard combined with ¼ cup cane sugar or maple syrup.
Place glazed turkey in roaster and cover loosely with foil or roaster lid. Place in preheated 325° F oven. Cook approximately 15 minutes per pound, however check for doneness an hour before end of the recommended roasting time. Your smoked turkey is done when meat thermometer reads 165° F.
Allowing your turkey to rest in roaster, loosely covered for 15-20 minutes ensures that the natural juices will remain in the meat and will make carving easier.
Serve with mustard.
